Peel two potatoes and cut them in big cubes. Wash them through cold water and place it in a pan full of cold water.
Sprinkle some salt and bring it to boil. Once boiling, lower the heat down and simmer it for 15-20 minutes until they are fork tender.
While potatoes are boiling, blend cilantro, garlic, chives, thai green chilis and ginger root in a food processor. keep it aside.
Once cooked, drain the potatoes and place them in a bowl. Mash them using potato masher to your desired consistency. The smoother is it, the better it is!
Add blended cilantro paste, salt, turmeric powder, dhana jiru powder, oil, whole milk and heavy whipping cream. Mix well.
Keep whipping using a whisker or standing mixer to make smooth buttery consistency.
Garnish it with more chives and serve them room temp. It taste really good with plain phulka rotis!
