Spicy Garlicky Mashed Potatoes - known as bataka nu kachu in Surat city of Gujarat is an Indian version of creamy mashes potatoes loaded with garlic, cilantro, chives and some spices!

Ingredients

  • 2 Boiled Russet Potatoes
  • 3 Thai Green Chilis or large serrano pepper
  • 1 inch Ginger Root
  • 3 Large Garlic Cloves
  • ¼ cup Chopped Chives or fresh green garlic
  • 1 cup Lightly Packed Cilantro
  • 2 tbsp Whipping Cream
  • cup Whole Milk
  • cup Peanut or Sesame Oil
  • tsp Salt
  • 1 tsp Dhana Jiru Powder Cumin Coriander Powder
  • ¼ tsp Turmeric Powder

Instructions

  • Peel two potatoes and cut them in big cubes. Wash them through cold water and place it in a pan full of cold water.
  • Sprinkle some salt and bring it to boil. Once boiling, lower the heat down and simmer it for 15-20 minutes until they are fork tender.
  • While potatoes are boiling, blend cilantro, garlic, chives, thai green chilis and ginger root in a food processor. keep it aside.
  • Once cooked, drain the potatoes and place them in a bowl. Mash them using potato masher to your desired consistency. The smoother is it, the better it is!
  • Add blended cilantro paste, salt, turmeric powder, dhana jiru powder, oil, whole milk and heavy whipping cream. Mix well.
  • Keep whipping using a whisker or standing mixer to make smooth buttery consistency.
  • Garnish it with more chives and serve them room temp. It taste really good with plain phulka rotis!
