Cantaloupe Cucumber Salad
Refreshing summer salad with fresh cantaloupe, cucumber, mint, lemon zest and juice, subtle spices, feta cheese and just a dash of honey!

- ½ Cantaloupe cubed or balls
- ½ English Cucumber sliced
- 1 tbsp Chopped Mint
- ¼ tsp Pink Salt
- ¼ tsp Roasted Cumin Powder
- ¼ tsp Black Pepper
- ¼ tsp Chili Lime Seasoning
- 1 tbsp Lemon Juice
- 1 tsp Honey sub with maple syrup for vegan
- ¼ cup Feta Cheese optional if making it vegan
- ½ tsp Lemon Zest
Make dressing by mixing all the ingredients listed above except cantaloupe and cucumber in a big wide bowl.
Toss in cantaloupe balls/cubes and sliced cucumber in the bowl with the prepared dressing.
Chill it in the refrigerator for 30-40 minutes.
Serve it cold in the cantaloupe shell with wedge of lime to make it look pretty!!
