Green papaya salad

Green papaya salad is very refreshing during those hot summer days and also very light on your stomach. This is vegan and gluten free recipe.

Equipment

  • Mortar and Pestle
  • Julienne peeler or box grater

Ingredients

  • 1 Green Papaya small
  • 15 Green Beans
  • 15 Cherry Tomatoes
  • 1 cup Roasted Peanuts
  • 1 bunch Cilantro
  • 1 Red Thai Chilli Pepper 2 for more heat!
  • 4 cloves Garlic
  • 2 Lime
  • 2 tbsp Salt
  • 2 tbsp Maple Syrup

Instructions

Prepare Veggies

  • Take the skin off of green papaya. Cut it in half ad take all the seeds out. Start peeling it or grating it long and thin like spaghetti. Add 1 tbsp of salt and juice of 1 fresh lime.
  • Now time to use some arm strength ;). Start working the shredded papaya with your hands. Keep mixing papaya and juice together for few min with some hand pressure. This helps to break hardness of papaya down. Makes it more juicy and easy to chew. Keep it aside.
  • Cook green beans in boiling water for 3-4 min and then put it in the cold water for 3-4 min so its still crunchy. Drain the water out and cut each one in 2-3 pieces. Add it to the papaya mix.
  • Cut cherry tomatoes in halves and chop the cilantro finely, make sure to wash cilantro very well as it contains grainy dirt sometimes. Add those into the papaya mix as well. Mix all veggies together and keep it in the fridge.

Prepare garlic chilli paste.

  • Add garlic, thai red chilli pepper, 1 tbsp of salt and juice of 1 fresh lime into Mortar and Pestle. Start crushing all those ingredients in the Mortar and Pestle until it turns into paste like consistency. Leave the paste little grainy.
  • NO Mortar and Pestle - no worries if you dont have Mortar and Pestle. Use a small chopper or food processor to make the paste of garlic, thai red chilli pepper, 1 tbsp of salt and juice of 1 fresh lime. Leave the paste little grainy.

Serving!

  • When ready to eat, Add spice paste to the prepared veggies and mix very well. Taste it and add more salt and/or lime juice if needed. Add some roasted peanut to the mix and server cold!
