Prepare a food steamer to steam the khichu.
While the food steamer is getting ready, Start boiling 2¾ cups of water in a deep pot. Add chopped green chillies, salt, baking soda, cumin seeds (jeera) and carom seeds (ajwain).
Slowly add 1 cup of rice flour to the boiling water and keep mixing it until you reach thick soft dough consistency. It should take about a minute or two to get to that consistency. Turn the heat off.
Transfer khichu dough from the pot to the food steamer and steam it for 20 minutes.
While the khichu is steaming, take 3 tbsp of peanut oil, chopped cilantro and roasted jeera powder in a big bowl for garnishing.
Once the khichu is steamed, take the hot khichu out in a bowl that you prepared all the garnishing in and mix everything very well.
Sprinkle some achar masala on the khichu and Serve it hot!
