Egg Salad Sandwich

Egg Salad Sandwich simply made with spiced up boiled eggs along with healthy spread and topping!

Ingredients

Egg Mixture

  • 6 Hard Boiled Eggs OR 15.5 oz canned chickpeas (washed/drained)
  • 1 tsp Trader Joes Bomba sauce OR Red Thecha Chutney
  • ½ tsp Salt
  • ½ tsp Pepper
  • ¼ tsp Red Chili Powder
  • 2 tbsp Cream Cheese

Other Ingrediets

  • 4 English Muffins or choice of bread
  • 1 tbsp Spread Butter Optional
  • 1 Avocado
  • 1 Tomato sliced
  • 1 handful Fresh Baby Spinach
  • 2 tsp Everything Seasoning

Instructions

  • Mash boiled eggs (boiled chickpeas if swapping with eggs). Add in salt, pepper, red chili powder, cream cheese & bomba sauce (or red thecha chutney). Mix it well to creamy mixture.
  • Toast english muffin and butter it.
  • Spread mashed avocado on one side of the english muffin.
  • Top it with egg/chickpea mixture.
  • Top it with sliced tomato, everything seasoning and baby spinach. Top it with other side of the english muffin to make a sandwich.
  • Enjoy it with choice of beverage!!
