Ingredients

Ginger Garlic Paste

  • 1 tbsp Oil
  • ½ inch Ginger Root
  • 2 clove Garlic
  • ½ Serrano Pepper
  • ¼ tsp Red Chili Powder
  • ¼ tsp Cumin Seeds

Other

  • 2 tbsp Oil
  • 1 tsp Hing/Asafetida
  • ¾ cup Finely Chopped Onions
  • 3 Large Tomatoes, chopped
  • 1 tsp Kashmiri Red Chili Powder
  • ½ tsp Turmeric Powder
  • 1 tsp Salt
  • tsp Cumin Coriander Powder
  • ¼ tsp Garam Masala
  • 2 tsp Jaggery
  • ½ cup Water
  • ¼ cup Chopped Cilantro
  • ¾ cup Thick Sev

Instructions

  • Make a grainy paste of everything listed under "Ginger Garlic Paste". I like to use mortar and pestle to make this paste, but you can certainly use grinder. Keep it aside once done.
  • Heat 2 tbsp of oil and add cumin seeds. Once they start to fragrant and deepen in color, add asafetida.
  • Add in finely chopped onions. Saute for couple of minutes.
  • Add Ginger Garlic Paste, mix well and saute till onions are translucent.
  • Add in other spices (kashmiri red chili powder, cumin coriander powder, salt, turmeric powder & garam masala). Mix well. Cook for a min or two.
  • Add in chopped tomatoes along with ½ cup of water. Mix well and cover it. Keep cooking on medium heat till half of the moisture is evaporated and tomatoes are soften.
  • Add in jaggery, mix well and cook for another 2-3 minutes.
  • Add in cilantro, mix well. Mix in sev right before serving. Enjoy it with simple bhakhri!
