Make a grainy paste of everything listed under "Ginger Garlic Paste". I like to use mortar and pestle to make this paste, but you can certainly use grinder. Keep it aside once done.
Heat 2 tbsp of oil and add cumin seeds. Once they start to fragrant and deepen in color, add asafetida.
Add in finely chopped onions. Saute for couple of minutes.
Add Ginger Garlic Paste, mix well and saute till onions are translucent.
Add in other spices (kashmiri red chili powder, cumin coriander powder, salt, turmeric powder & garam masala). Mix well. Cook for a min or two.
Add in chopped tomatoes along with ½ cup of water. Mix well and cover it. Keep cooking on medium heat till half of the moisture is evaporated and tomatoes are soften.
Add in jaggery, mix well and cook for another 2-3 minutes.
Add in cilantro, mix well. Mix in sev right before serving. Enjoy it with simple bhakhri!
