Tortellini salad loaded with bunch of veggies, tangy capers, feta cheese and Mediterranean flavored homemade dressing!

Ingredients
Veggies
1cupMulti Color Sweet Pepperscut in circle or sliced
1cupSliced Red Onions
1cupSliced Carrots
1cupBaby Spinach Ribbonsbaby arugula can be used instead
1cupCherry Tomatoes, cut in halves
¼cupCapersolives can be used instead
½cupFeta Cheese
1cupBoiled Asparagus
3cupBoiled Cheese Tortelliniany pasta would work
Dressing
¼cupExtra Virgin Olive Oil
1tspApple Cider Vinegar
1tbspHorseradish Mustard
½tspPink Saltor regular salt
¼tspBlack Pepper Powder
1tspDry Oregano
1tspDry Thyme
2tbspFresh Lemon Juice
1tbspLemon Zest
1tbspHoneyor maple syrup
2tspMinced Garlic
Instructions
Prepare Dressing
Blend all dressing ingredients using a blender or shake it vigorously in a mason jar to everything mixes well.
Prepare Salad
Boil tortellini/pasta al dente as per box instructions. Add cut asparagus to boiling pasta when there is one minute left for tortellini/pasta to be done boiling.
Drain it using strainer, run cold water through it and drain it completely.
Mix all veggies and boiled tortellini/pasta along with asparagus in a big wide bowl.
Pour dressing over it and mix well.
Add feta cheese and capers/olives and mix it well.
Serve it cold!
Notes
You can make this a day ahead and keep it refrigerated for couple of days!
