Quinoa Tabbouleh

Tricolor Quinoa Tabbouleh made with quinoa, fresh parsley, scallions and mint. Flavored with fresh garlic, lemon zest, lemon juice, Extra virgin olive oil, salt and pepper!

Ingredients

  • 1 cup Steamed/Boiled Tricolor Quinoa I like to steam/boil quinoa with some salt!
  • 3 cup Fresh Chopped Parsley
  • ½ cup Fresh Chopped Scallions
  • ¼ cup Fresh Chopped Mint
  • 1 cup Chopped Cherry Tomatoes

Dressing

  • 1 tbsp Minced Garlic
  • 1 tsp Lemon Zest
  • 3 tbsp Lemon Juice
  • 3 tbsp Extra Virgin Olive Oil
  • 1 tsp Pink Salt
  • ½ tsp Black Pepper Powder

Instructions

Prepare Dressing

  • Mix all dressing ingredients very well, I like to put all dressing ingredients in a small mason jar and give it a great shake.

Make the salad

  • Mix all the salad ingredients and dressing in a big bowl.

  • Cover it and refrigerate it for at least 2 hours before serving. It taste even better if you make it a day ahead!
  • Serve it cold with any Mediterranean dish!
