Crack two eggs in a bowl and beat it well.
Add chopped onions, bell peppers, green chili, cilantro and all the spices to the beaten eggs and mix it all very well.
Add butter to a pan and melt it on medium flame. Spread the melted butter on the whole pan.
Pour the egg mix out to the buttered pan and spread it evenly all over the pan.
Immediately place 2 slices of bread right in the middle of the spreadded egg mix while it is runny and uncooked.
Let the bread soak some egg mixture. Flip them and place it on the uncooked omelette again.
Let the omelette get firm and cooked on the side that is facing the pan keeping it on medium flame. Cooking this omelette on medium flame is the key as we want to cook it slowly and not burn it!
Once the omelette is firm enough to flip, flip it with bread so now the bread side is down facing the pan and firm omelette side is up.
Let the other side cook as well on medium heat.
Once the other side is cooked, place a slice of cheese on one half of the omelette and start folding side of the omelette that is off the bread.
Once all omelette sides are on the bread partially covering the cheese, fold the one side of the bread omelette on the other.
Let both bread slices get golden brown, adding more butter if like and flipping as needed.
Sprinkle some chaat masala to the bread omelette and serve it hot with choice of side!
