Steel Cut Oats – Instant Pot

As we are approaching fall, I like to have warm breakfast with some sweet spices! The best thing to warm you up in the cold mornings is a warm delicious bowl of oatmeal! Specially when you can make it within minutes! Yes, this recipe uses Instant Pot and it only take 4 minutes to cook these steel cut oats vs 35-40 minutes on the stove. Of course the prep time and cooling time is there but it’s not that bad!

I like to sauté steel cut oat in coconut oil for few minutes first. It bring a unique flavor to the oats.Once the oats are sautéed and becomes aromatic, I add all the other ingredients together in an instant pot, set the cook time for 4 minutes and just walk away. By the time I am done with other morning activities, the pressure is released naturally and the oats are ready to eat!

I like to top my steel cut oats with chopped walnuts, bananas, extra cinnamon powder and a little bit of maple syrup! Though there are so many other fun toppings you can use on these oats!

Ingredients

  • 1 cup Steel Cut Oats
  • 2 tbsp Coconut Oil
  • 1 tbsp Flax meal Flax seed powder
  • 1 tsp Cinnamon Powder
  • 2 cup Unsweetened Almond Milk
  • 1 cup Water

Instructions

  • Put instant pot on sauté mode. Add 2 tbsp of coconut oil to the pot and wait till it melts.
  • Add one cup steel cut oats to the melted coconut oil inside the pot and saute for 5-7 minutes or until nutty aroma rises or it changes color to golden brown.
  • Once the oats are sautéed, add 1 cup of hot water, 2 cups of unsweetened almond milk, 1 tbsp flax meal and 1 tsp cinnamon powder to the pot and mix it very well.
  • Place the lid on the instant pot and secure the valve.
  • Cook oats in the instant pot for 4 minutes on high pressure. Let the pressure release naturally for 20 minutes. This helps the oats to soften and get to right consistency!
  • After 20 minutes of releasing pressure naturally, manually release rest of the pressure and open the lid carefully.
  • Mix the oats well, add more almond milk to it if desired and mix it well.
  • Serve it hot with choice of toppings! I like to top mine with chopped walnuts, bananas, extra cinnamon powder and little bit of maple syrup!
