Quick and easy protein waffles, packed with nutrients and amazing flavors with a hint of coconut, rose and cardamom.

I am more of a savory breakfast/brunch kinda gal. However once in awhile I do crave something sweet to begin my day. Lately I have been eating pretty much same food on regular basis as I am on a health journey with more protein and fiber. I am not going to lie by saying that it has been a fun journey. Because we all want change more often than we know. These yummy protein packed waffles were an outcome of such urge to change up my routine.

I have been aiming for adding protein and fiber into all my meals. Usually pancaked and waffle are more of a carb based food items than other way around. However it does not have to be that way all the time. These waffles are semi homemade version of healthy waffles. I love using Kodiak waffle/pancake mix to cook different version of sweet and savory goodies. These waffle are made with kodiak waffle mix which already contains decent protein. To add more to it, I make the batter with Fairlife high protein milk. And the fiber comes from bright red beetroots.

Now that we have the main two components in these waffles, let’s talk about flavors. I am a sucker for coconut, rose, cardamom flavors in an sweet goodies. So why not add them to these waffles to make them absolutely delicious?!?! That is all it takes to make these waffles. Simple 6 ingredients, kodiak waffle mix, high protein milk, beetroots, coconut, rose extract and cardamom powder. Mix it all together with pinch of salt and use your waffle mix to whip up an amazing meal.

There are so many topping options you can play around with when it comes to pan cakes and waffles. I personally like to top these gorgeous red waffles with cottage cheese and fresh berries with a drizzle of maple syrup. I promise you will get hooked on this delicious fixation of mine. This is one of those recipes that is super simple to make and whole family is going to love it, including kids. No more making of different foods for different family members.

Servings 6 small waffles

Ingredients

  • 1 cup Kodiak Protein-Packed Flapjack & Waffle Mix
  • 1 cup Fairlife 2% Plain Milk
  • 1 medium Roasted/boiled beetroot, shredded
  • â…“ cup Dry Shredded Coconut, unsweetened
  • ½ tsp Cardamom Powder
  • ½ tsp Rose Extract
  • 1 pinch Salt

Instructions

  • Mix all ingredients listed above, make 4 large or 6 medium waffles using waffle maker. Or simply make pancakes using some butter
  • Top it with either cottage cheese for more protein or whipped cream along with fresh berries, slices banana and sprinkle of powdered sugar with drizzle of maple serup!
