Sheet pan paneer shashlik, easy week night vegetarian dinner recipe that includes cubes of paneer, marinated 2 different ways and vibrant vegetables like bell peppers and onions.
Tandoori paneer tikka, a classic north Indian dish that involves marinated paneer with spicy smokey flavors and vibrant colors. Tandoori paneer tikka is great as an appetizer, as well as salad topper or even to make wrap/panini/pizza/kathi rolls etc.
While Hariyali paneer tikka is similar concept of marinating paneer and cooking it until charred but with different flavors. These hariyali paneer tikkas are bright green paneer cubes marinated with minty tangy refreshing flavors and cooked with onions and peppers until charred. These are also great as an appetizer, as well as salad topper or even to make wrap/panini/pizza/kathi rolls etc.

I personally love BOTH flavors of paneer tikka, my kids and husband have theirs days when they love one over the other. So just make everyone happy, I make both at the same time in a sheet pan. And simply serve it with Peas pulao, lentil salad and minty yogurt sauce. The whole combination makes it a super delicious and balanced meal that the whole family love!
My peas pulao is pretty much same as my Jeera Rice recipe with added frozen peas. Lentil salad is simply a mix of Trader joes steamed lentils, chopped cucumber, red onion, tomatoes that is flavors with black salt, roasted cumin powder and chaat masala. Minty yogurt sauce is a mix of greek yogurt, water, hariyali marinade (recipe below) with pinch of black salt.
Hariyali Paneer Tikka
Ingredients
Green Paste Ingredients
- 1 cup Lightly Packed Fresh mint leaves
- 1 cup Cilantro
- ½ cup Baby Spinach
- 1 Serrano
- 1 inch Ginger Root
- 1 large Garlic Clove
- 1 tsp Roasted Cumin Powder
- 1 tbsp Chaat Masala
- 2 tbsp Kasuri Methi
- 2 tbsp Mustard Oil any other oil would work
- 1 tbso Lemon Juice
- 1 tsp Black Salt
- 1 tsp Sugar
- ¼ tsp Black Pepper Powder
- ¼ tsp Mango Powder
Other
- â…“ cup Full Fat Plain Greek Yogurt
- 1 lb Paneer, cubed preferably SACH paneer
- ½ large Red Onion, cubed
- 1 Green Pepper, cubed
Instructions
- Blend everything listed under "Green Paste Ingredients", you should not need any water to make this paste as we want the paste to be thick.
- Once the paste it ready, take it out in a big bowl, mix it with yogurt. Then add in cubed paneer, onion & pepper.
- Coat everythign really well with the green marinade. Cover and refrigorate it for anywhere from 30 min to overnight.
- Once ready, place it all in a single layer in a greased sheet pan. Bake it on 425℉ for 20 min, or until the paneer/veggies edges start to char.
- Once done, enjoy it as it is or as a salad topper or to make wrap/sandwiches/panini/pizza etc.

- 1 lb Fresh soft paneer, cubes preferably SACH brand
- ½ cup Plain Whole Milk Greek Yogurt
- 1 tbsp Grated Ginger
- 2 tbsp Minced Garlic
- 1 tbsp Tandoori Masala preferably Shan food brand
- 1 tsp Garam Masala
- 1½ tsp Chaat Masala
- 1 tsp Kashmiri Red Chili Powder
- 1½ tsp Roasted Cumin Powder
- ½ tsp Turmeric Powder
- ¼ tsp Black Pepper Powder
- ½ tsp Salt
- ½ tsp Kasuri Methi
- 1 tbsp Lemon Juice
- 2 tbsp Mustard Oil any oil of your choice will work
- 2 tsp Honey
- ½ large Red Onion, cubed
- ½ large Red Pepper, cubed
- ½ large Green Pepper, cubed
Instructions
- Mix everything listed under "Tandoori Paneer Tikka" BUT paneer, onion & pepper in a big wide bowl. Keep it aside.
- Then coat cubed paneer, onion & peppers with the marinade. oat everything well, cover and refrigerate for anywhere from 30 min to overnight.
- When ready to bake, take it out in a single layer in a greased sheet pan. Bake it on 425 ℉ for 20 minutes or until it paneer and veggies edges start to char.
- Once done enjoy with minty yogurt sauce as it is, or use it as a salad topper, to make wraps/sandwiches/paninis/pizza etc.
